Lemon blueberry oatmeal smoothie

As things settle back to normal here (normal being a relative term), I am doing my best to both i) remember why I started this blog (I was eating out too much) and ii) fulfill my mission to create wholesome country recipes mixed with an “urban flair” (I’m still figuring out what that means exactly).

Up to this point, there hasn’t been much “urban” going on besides me getting tired of walking to the grocery store 4 times a week to buy ingredients. And I came to my first major realization about what makes something “urban friendly”…

A small number of ingredients that all fit into one grocery bag.  Preferably ingredients you already have in the pantry.

Of course, this is also true for country living, as well as busy and frugal families everywhere, but seeing as how the car typically plays a role in facilitating the process (at least in North America), it is less burdensome. And if there’s no car, then you really have it rough! You have my full admiration.

So, in recognizing this and recommitting to my mission, I am posting a sample of what often gets made in my house–a smoothie with whatever I’ve got on hand. But I’ve given some thought to this one because I detect that these flavours will be hits of the season.

Why lemon and blueberry?

Because they’re everywhere.

They all look delicious!  But I’m off baking this week…

You see, the pounds have been stubborn this past month, and the last thing I can afford to do right now (especially because I’ve been testing a delicious biscuit recipe I’ll soon be featuring, plus I ate the whole carrot cake from the last post) is desserts. Sugar and flour are on hiatus for at least a week.

But I still believe you can have dessert even when you “can’t” have it, if you get my drift. So here is a sweet and nutritional substitute.

Lemon blueberry oatmeal smoothie

Refreshing and guilt-free smoothie.

  • Prep Time: 5m
  • Total Time: 5m
  • Serves: 1

Ingredients

  • 1 cup frozen blueberries
  • Juice of one lemon
  • 1 banana, peeled
  • 1/2 cup vanilla Greek yogurt
  • 1/4 cup old-fashioned rolled oats
  • 1/4 cup milk

Instructions

  1. Combine all ingredients in a blender.
  2. Blend until smooth.
  3. Pour into one 16 oz. glass for a single serving or two 8 oz. glasses for two servings.
